| Low Carb Coconut & Chocolate Pudding |
INGREDIENTS
- 14 oz. of plain milk (unsweetened)
- 2 egg yolks
- 3 oz. of sugar-free dark chocolate or chocolate with at least 80% cocoa solids
- 1tbs vanilla extract
DIRECTIONS
- Stir together coconut milk and egg yolks in a sauce pan.
- Place in a medium-low heat source and simmer for 10 minutes while stirring.
- Add the chocolate to the bowl after breaking it up into small pieces.
- Pour the coconut milk on top after adding the vanilla. Pour into glasses after letting stand for a while.
- Before serving, place in the fridge for at least two hours.
