| Candied Fruit Cookies |
INGREDIENTS
- 1/2 Cup softened butter
- 3/4 Cup sugar
- 1 Egg
- 1 1/4 Cups all_purpose flour
- 1/2 Teaspoon ground cinnamon
- 2 1/2 Cups pitted dates, chopped
- 3/4 Cup chopped almonds, toasted
- 3/4 Cup coarsely chopped brazil nuts, toasted
- 1/2 Cup each chopped candied cherries and pine-apple
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
DIRECTIONS
- Butter and sugar should be creamed until light and fluffy in a large bowl.
- Beat in the egg.
- Then gradually add it to the creamed mixture and thoroughly mix.
- Combine the flour, baking soda, salt, and cinnamon. Fruits and nuts are folded in.
- Onto greased baking sheets, drop teaspoonfuls of the mixture 2 inches apart.
- For 8 to 10 minutes, or until just lightly browned, bake at 375°.
- Remove to wire racks.
